Weekly Menu {9/28–10/2}
I love when a weekend feels like the perfect amount of time. It doesn’t feel too short, and it feels like I was able to get in a lot of stuff. This weekend was one of those weekends. We went to the apple orchard on Saturday, and then after church on Sunday we headed to one of the western suburbs for a flea market. The weather was just perfect to wander around outside, and we found a few treasures. All in all, it was a good weekend.
Here’s what we’ll be having this week for dinner.
Monday—Dylan’s eating out with a friend, so I think I’ll grab a frozen pizza or something else that’s easy.
Tuesday—Sweet & Sour Chicken. I have a cookbook called Quick & Easy Chinese that I’m going to use, but here’s a similar recipe.
Wednesday—Lamb Sloppy Joes and a Kale Salad. We have a cookbook called Recipes to the Rescue, and it has a recipe for sloppy joes with ground lamb, feta, bulgur, oregano, and tomato sauce. It sounds intriguing. Here’s a similar recipe but use feta instead of the sharp cheese it calls for.
Thursday—Meatball Soup. This is also from the Quick & Easy Chinese cookbook.
Friday—Dylan’s taking me on a date, so we’re going to grab dinner out somewhere.
