Weekly Menu {5/9–5/13}
Happy Monday and Happy Mother’s Day! Also, Happy Birthday to my wonderful mom! I hope you each had a nice weekend. On Saturday we had a garage sale and were able to get rid of a bunch of stuff, and then yesterday my husband and son spoiled me with flowers, lunch at a new restaurant, a lazy afternoon, and take-out from a neighborhood place we like. It was a great day all around.
Here’s what’s on the menu this week.
Monday—Frozen Pizza and Salad. I intended to go to the grocery store earlier today, but my son isn’t feeling well. He has a new tooth coming in, and it has been disrupting his nap schedule quite a bit.
Tuesday—Italian Beef Stew.
Wednesday—Cuban Chicken & Black Bean Quinoa Bowls
Thursday—Leftovers
Friday—Nachos. I like to toss on a variety of things—ground beef, black beans, red peppers, and cheese. Bake until crispy and then serve with sour cream, taco sauce, black olives, and avocado slices.
