Weekly Menu {4/25–4/29}
This month has really flown by. I can’t seem to account for most of the middle of the month. Finn has been walking like a champ and loves exploring around the house, and as the weather has been nice, the yard. This last week he and I went to Wisconsin to visit my parents. It was a low-key trip hanging out around the house, and it definitely made the week go by much faster than usual. Now, it’s back to normal life—cleaning my house, grocery shopping, etc.
Here’s what’s on our menu this week.
Monday—Lamb patties in pita with tzatziki sauce. The specialty grocery store near our house has these great lamb patties with feta in them. I like to cook them in a pan and then put them in pita with romaine, cucumbers, and a dollop of tzatziki sauce.
Tuesday—Salmon with Herb Yogurt Sauce
Wednesday—Pulled Pork Stuffed Sweet Potatoes. I really like this combo, and it is pretty easy to put together. I use store bought barbecue sauce.
Thursday—Leftovers
Friday—Spicy Pork Meatball Bahn Mi. I made this a few weeks ago, and it was so good. I can’t wait to make it again.
