Weekly Menu {1/11–1/15}
Did you have a nice weekend? Ours was pretty good despite the bitter, bitter cold. The depths of winter are definitely upon us. Stay warm, friends!
Here’s what’s on the menu this week.
Monday—Nachos with ground beef, cheese, black beans, and black olives.
Tuesday—Lamb & Potato Stew with a few modifications. This is a bit more intricate of a recipe, but it looks so good, and we have a friend coming for dinner.
Wednesday—Chorizo Spinach Feta Frittata
Thursday—Salmon, Black Bean Tacos based loosely off this recipe.
Friday—Smoky Corn Chowder with Shrimp using canned corn.
