Banana Bread
As the air gets crisp in the morning, I really like a piece of banana bread with a hot cup of coffee. Here’s our favorite recipe. It’s simple to put together and pretty foolproof. It’s a staple around our house.
Banana Bread
Ingredients
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs, beaten
- 2–3 bananas (ripe, bordering on overripe)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon raw sugar (optional)
Directions
- Preheat oven to 350º F. Lightly butter (or grease) a 9×5 inch loaf pan.
- In the bowl of your stand mixer, cream together the butter and brown sugar. Stir in the eggs and bananas until well blended.
- Add the flour, baking soda, and salt to the wet ingredients. Gently mix until just combined.
- Pour the batter into your prepared loaf pan. If desired, sprinkle with 1 tablespoon of raw sugar.
- Bake in your preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean. (I check it after 50 minutes and go up as needed from there.)
- Let the bread cool in the loaf pan for 10 minutes or so, then turn it out onto a wire rack to finish cooling.
