Aztec Salsa

I don’t remember how I found this recipe for Aztec Salsa, but I am so glad I did. It is one of our favorites and comes together really easily. Basically, it is just a mixture of avocado, black beans, corn, tomatoes, and onions with oil and seasoning. Serve it with chips or over other items. It’s delicious!

Aztec Salsa

Ingredients

1/4 cup red wine vinegar

1/4 cup olive oil

1 package dry Italian-style salad dressing mix

1 (15 ounce) can black beans, rinsed and drained

1 (11 ounce) can corn

1 small red onion, chopped

3 tomatoes, seeded and chopped

2 avocados – peeled, pitted, and chopped

Directions

Whisk together the red wine vinegar, olive oil, and Italian dressing in a large mixing bowl. Stir in the black beans, corn, and red onion. Add the tomatoes and gently stir. Add in the avocados and gently stir again.

Serve with tortilla chips or over salad, tacos, quesadillas, or whatever you feel like really.
